The Coffee Trader's Smoked Salmon and Spinach Quiche

4 cups cream
8 eggs
2 egg yolks
Salt, pepper, cayenne, and nutmeg to taste
2 tablespoons mustard
3/4 pound smoked salmon, crumbled
1 pound drained, frozen chopped spinach, thawed
1 pie crust (9-inch) unbaked

Preheat oven to 350 degrees. Mix cream, eggs, and egg yolks. Season lightly with salt, pepper, cayenne, and nutmeg. (Salmon is salty, do not over-season).

Add remaining ingredients and pour into crust. Bake 45 minutes or until custard sets. Makes 6 servings.
