Karl Ratzsch's Tom & Jerry

8 large eggs, separated
1/2 teaspoon cream of tartar
1 and 1/2 cups powdered sugar
Rum or bourbon
Cognac or brandy
Boiling water
Freshly grated nutmeg

In a large mixer bowl, beat yolks until creamy. Set aside. In a separate bowl, combine egg whites and cream of tartar and beat until stiff. Add powdered sugar and beat until incorporated.

Fold sweetened egg-white mixture into creamed yolks. Whisk until light and fluffy. Refrigerate until ready to use.

In a preheated 6 oz. mug, add 2 heaping ladles of batter, a shot of rum or bourbon, and a shot of cognac or brandy. Top with boiling water and stir lightly. Dust each with grated nutmeg. Serve immediately.
