Kosta's White Manor Inn's Baklava

1 pound walnuts, coarsely chopped, lightly toasted
1/2 pound almonds, coarsely chopped, lightly toasted
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla
1 1/2 pounds butter, melted
1 (1-pound) package frozen phyllo dough, thawed in wrappings
2 cups sugar
1 cup water
Pinch of salt
1 lemon
1 stick cinnamon
6 whole cloves
1 cup honey

Preheat oven to 300 degrees.

In a bowl, mix the walnuts, almonds, cinnamon, vanilla and 1 tablespoon melted butter. Set aside.

Brush 9"x12" baking pan with some melted butter and place 1 sheet of phyllo dough in the pan. Brush with the melted butter. Continue in this manner until 8 sheets of dough are in the pan, brushing melted butter between each sheet.

Alternate the filling with all but 6 sheets of the remaining phyllo dough, brushing each sheet of dough with melted butter.

Top with 6 sheets of phyllo dough, one at a time, brushing melted butter between each sheet. Cut the baklava into triangles or squares.

Bake in preheated oven 2 hours. Remove and cool completely.

Place the sugar and water in a saucepan and bring to a boil. Add the salt, juice and rind of the lemon, cinnamon stick and cloves. Return to a boil. Remove from heat, strain, and stir in honey. Immediately pour over cold baklava while the syrup is hot.

Allow to cool completely and serve at room temperature.
